Treat yourself to a bedtime snack, inspired by our relaxing The Ritual of Jing collection.
Although I’m a big advocate for a healthy lifestyle, I also have my pitfalls. Late-night snacking is definitely one of them. After a day of healthy eating and exercising, cravings for something sweet before bed often pop up more often than not. For anyone who can relate, I came up with this recipe: lavender yoghurt bark with berries.
This is a great recipe for several reasons: 1) you make it in a batch and store it in the freezer, so you always have a stash on hand, 2) it’s light and refreshing without being a massive sugar bomb, and 3) it’s a wink to The Ritual of Jing collection.

Good to know: the thyme is optional, but it is thought to have a calming effect on the nervous system.
Cooking time: 10 minutes (+ 4 hours waiting)
Serves: 8

Ingredients:
- 400 g Greek yoghurt
- 2 tbsp maple syrup
- 1 tbsp dried lavender flowers (+ extra for the presentation)
- A pinch of salt
- 2 tbsp blueberry jam
- 100 g mixed berries (blueberries, blackberries, raspberries)
- A pinch of salt
- Optional: fresh thyme leaves for garnish
Steps:
- Line a baking sheet with parchment paper.
- In a bowl, combine the Greek yoghurt with the maple syrup, dried lavender flowers, vanilla extract and a pinch of salt. Stir until smooth and well combined.
- Spread the yoghurt mixture evenly onto the prepared baking sheet, creating a thin layer.
- Divide the blueberry jam in small teaspoons over the yoghurt and marble it into the yoghurt with a butter knife.
- Scatter the mixed berries over the top, pressing them lightly into the yoghurt. Garnish with some extra lavender flowers and with some thyme, if using any.
- Freeze for at least 4 hours, or until the bark is solid and fully set.
- Break the frozen yoghurt bark into pieces and store in an airtight container in the freezer. Enjoy as a healthy snack whenever cravings hit.
