If your mum has requested no presents, just your presence this Mother’s Day – this is the perfect way to treat her. Even if she’s sent you a wish list, let’s face it, our mums deserve the world and what’s more thoughtful than cooking up a 2-course dinner in her honour? Packed with flavour and not too tricky to make – here are two recipes you'll enjoy making, and she will definitely enjoy tucking into.  

 

For main: Pearl barley and pumpkin risotto  

Made with delicious pearl barley (that’s high in fibre) instead of rice, this is comfort food without all the calories (unless you add mountains of parmesan, which let’s be honest we recommend). With parsley, pumpkin, basil, shallots and lemon, every bite of this colourful dish will welcome new flavours.

For dessert: Vegan cheesecake with orange caramel  

Yes, we know, cheesecake is usually a bit of an easy dessert option, but hear us out. This take on the classic is far easier than a crème brûlée but looks a lot more finessed than your standard cheesecake. With a baked nutty crumble and deliciously sweet orange caramel – mum is guaranteed to love you even more after her first bite.
