Healthy snack: Indian carrot dip with vegetables

It’s something a little different than hummus or baba ganoush (which are both delicious by the way!) but it’s also just as tasty. This carrot dip is very flavourful and makes all the other vegetables even more delicious. Great to serve with drinks as well as a sneaky way to get your kids their vitamins.

Recipe for 4 people
Preparation time: 20 minutes

Ingredients for the carrot dip

  • 500 g of carrots, peeled and cut in pieces
  • 4 tbs extra virgin olive oil
  • 1 tbs lime juice and the zest of 1 whole lime
  • ½ tsp cumin
  • 1 tsp caraway seed, powder
  • ½ tsp cayenne pepper, powder
  • ¾ tsp salt and freshly ground black pepper

Suggested vegetables to serve with dip

(Please note: You can use any vegetable you like. The carrot dip complements them all!)

  • 6 celery stalks, cut in pieces of around 7 cm
  • 1 bunch of radishes, peeled
  • 200 g cauliflower florets
  • 200 g broccoli florets
  • 2 heads of chicory, in loose leaves

 

 

Preparation

1. Steam the pieces of carrot in a steam basket for around 15 minutes until done

2. Puree the carrot together with the lime juice and zest. Add olive oil and puree until smooth. Add additional olive oil as needed

3. Add the rest of the spices and blend until everything is well mixed
